Phony Negroni

The king of all cocktails, it was the quest for a better non-alcoholic Negroni that led us to the launch of Novara. Traditionally made with an equal-parts ratio of Gin, Campari, and Sweet Vermouth, in this recipe we eschew the traditional proportions for a more balanced bitter blend in our non-alc take on our most favourite cocktail. Ingredients 40mL Novara Bitter Aperitivo 30mL Non-Alcoholic Gin 20mL Verjus or Non-Alcoholic Vermouth Preparation Instructions Add all ingredients to a mixing glass and fill with ice. Stir ingredients for 15-20 seconds to chill and dilute thoroughly. Strain into a pre-chilled old-fashioned glass, and add a single, large cube to glass. Jungle Bird

With the addition of a bitter aperitivo to its list of ingredients, the Jungle Bird is far from typical in the tropical cocktail category. Rumour has it the original cocktail was created in the early 1970's at the Kuala Lampur Hilton as the welcome drink for the hotel's opening, and it has remained a popular staple in the modern cocktail canon since then. Novara Spritz

Whether you want to refer to this as a Spritz or an Americano, there's no denying the refreshing nature of a simple mix of aperitivo and soda. Traditionally garnished with a simple wedge of orange, the addition of an (optional) Castelvetrano olive to the skewer adds a salty, savoury note perfectly complementing the effervescence of this simple, delicious cocktail.  Ingredients 60mL Novara Bitter Aperitivo 120mL Sparkling Water Preparation Instructions Add all ingredients to a wine glass filled with ice Using a bar spoon, stir glass gently to mix ingredients thoroughly. Garnish with an orange wedge, skewered on a cocktail pick.

Garibaldi

The namesake for this simple combination of freshly squeezed orange juice and bitter aperitivo, Giuseppe Garibaldi was an Italian general from the 1800s, and is remembered a key figure in the unification of Italy. This elegantly simple cocktail was all but forgotten until recently when New York City's Dante not only revived the recipe, but perfected it, in a refreshed version now seen in bars around the world today.  Key to Dante's revival was what they refer to as "fluffy" orange juice -- quite simply, freshly-squeezed OJ passed through a high speed Breville juicer directly before service. Maggiore

There's something special about the combination of tropical cocktails paired with bitter aperitivi. Located due north of the city of Novara, Lago Maggiore is the second largest lake in all of Italy, and the namesake for this favourite tropical sipper sweetened with the addition of almond orgeat and a blend of fresh juices, perfectly suited for sipping along the coastline.
