Phony Negroni
Novara provides the bitter backbone that Italian aperitivi traditionally supply.
- 40 mLNovara Aperitivo
- 30 mLNon-alcoholic gin (we like Tanqueray 0.0% or Monday Zero Alcohol Gin)
- 20 mLVerjus or non-alcoholic vermouth (we like Roots Divino Rosso)
- 2 dashesOvertly Orange Bitters (optional)
Stir with ice for 15 to 20 seconds, strain over one large cube and finish with expressed orange zest.

Novara Spritz
One part Novara to two parts sparkling water makes a bright, bitter spritz, finished with an orange wedge.

Add all ingredients to a wine glass filled with ice. Using a bar spoon, stir glass gently to mix ingredients thoroughly. Garnish with an orange wedge, skewered on a cocktail pick.
